need recipes for chorizo
Looking for recipes of rice and chorizo.

I make rice with chorizo a very basic way.
cut up chorizo into little pieces and sautee in rice pot with a bit of olive oil. take out chorizo, add chopped onion and sautee for a min or two, add rice portion, sautee together until all of rice is coated. add boiling water portion, salt, and return chorizo to the pot. cover and cook until rice is done.
the end. it's pretty good.
I also make a chorizo frittata that I really like.
slice chorizo about 1/8 of an inch thickness and brown slices in an oven proof pan. meanwhile, combine eggs, milk, salt and pepper and whisk together.
when chorizo is browned on both sides, pour in egg mixture. throw in a sprig or two of fresh rosemary.
put in 350 oven for 15 mins or so, until eggs set in the middle.
you can also add to this...potatoes. I dice and add to the chorizo pan before the eggs.
spinach I add to the egg mixture and combine before pouring into the pan.

Ok I am salivating over here thanks how much boiling water per cup of rice should I use for this recipe?

My absolute favorite preparation for chorizo is just sliced, pan fried.. and then I cook an egg over easy in the same pan. So delicious. I could seriously eat that every single day.
Sometimes I’ll do a quick cheater arroz con chorizo.
I cook up the chorizo with a little coating of olive oil. Remove chorizo, add a little chopped onion and garlic. Cook for 2 minutes and add some chopped cilantro and some tomato paste and cook over medium for a few minutes. Then I dump in some rice, a little chicken stock (2:1 ratio on the stock:rice)and a bit of chicken boullion – bring it up to a boil and then reduce heat to low and cover for 20 minutes. Take the cover off, add frozen peas and stir in a small can of tomatoes and the cooked chorizo. Season with salt and pepper to taste and done.

oh yes!!! eggs over with chorizo is soo freaking good!!! add some black beans and it's heaven.
although, sometimes I'll make eggs, chorizo and home fries. when I do that, I let the potatoes cook in the chorizo pan to pick up on those smokey flavors and just fry the eggs up in butter.

My father (who gave me this unnatural love of chorizo) used to do the same thing! He made the BEST homefries.. I remember they were flavored with bacon fat or chorizo drippings depending on what we were having with it.

I'm not a recipe person, but I do a really nice Chorizo and Chicken casserole. I just dredge the chicken in flour and S&P and fry them, take the chicken out of the pan, fry up the holy trinity (onions, carrots & celery) throw in some red wine, a few tablespoons of tomato paste, some chicken stock, cut the Chorizo in and pop it in a low oven for a few hours.
I am not sure if all Chorizo is the same, but the kind that I get is like a wet sausage (as opposed to a dried salami like sausage)
