Need some dinner ideas - Chicken
I have a pound of chicken defrosted. Can someone give me a quick, easy recipe that would include pantry ingredients so I don't have to go to the supermarket?
(things I have on hand include zucchini, red peppers, artichoke hearts, garlic, lemon, spices/herbs bread crumbs, eggs, butter, onion, red potatoes etc)

This is very quick and easy.
I put a slice of chicken breast on a piece of foil and add some veggies on top of the chicken. In your case, I would add zucchini, red peppers, articoke and onions. Season with salt,pepper, rosemary and add some lemon juice and olive oil. Seal the foil and bake in oven.
You can make potatoes on the side.

Okay, hmm...
What kind of chicken? Boneless, skinless chicken breast? Thin or thick?
Main Dishes - Chicken milanese Chicken francese Chicken piccata Chicken and artichokes with white wine sauce (over rice or pasta) Chicken scampi - can throw the artichokes in there too
Sides - Roasted zucchini with onion & spices Roasted red potatoes Parmesan potatoes (quarter the potatoes and coat with a mixture of olive oil and parmesan - almost like a paste - season with s&p and some fresh thyme if you have it, 400 degrees for 40 minutes)

I bet your kids would love this:
Soak the chicken tenders in buttermilk (if you don't have buttermilk, put 1 tbsp white vinegar into measuring cup and then add milk up to the 1 cup line... let sit for 5-10 minutes, then stir for a perfect buttermilk substitute). Dredge tenders in equal parts of mixed seasoned breadcrumbs and parmesan cheese. Bake at 500 for 6 minutes, flip and bake 6 more minutes. They come out super crispy (like chicken nuggets).
Make a nice honey-mustard dipping sauce (whisk together 1/4 cup mayo, 1 tbsp mustard, 1 tbsp honey & 1/2 tbsp lemon juice).
Serve with the parmesan potatoes I said above (they are SO YUMMY)
I swear, my DH loves this meal as much as my son! It's like a "kid" meal - and come on... adults love that too!
If you have frozen corn or peas, you can serve those (with some butter & salt) on the side too

I would dice the chicken in cubes and make a stir fry with all the veggies you have. Maybe add in taco seasoning or various spices.
We do this alot actually.
