Need some more ideas for christmas cookies
So I may be a bit psycho, because I may have already started planning out my xmas cookies
I like to start freezing dough right after thanksgiving, so I'm trying to think of what I can make this year:
So far, my list is:
Rainbow Cookies Gingerbread Cookies Form Mold Spice Cookies Peanut butter blossoms (freeze) Hermits Chocolate drop cookies (freeze)
Other ideas of dough I can freeze in advance? Drop cookies are fantastic!

I have no idea about freezing the dough because I have never thought to do that. But I wanted to share my familiesl favorite christmas cookies in case you wanted more ideas:
-rainbow cookies are my favorite! (but i know you said you are making those already) -almond horns -chocolate peanut butter balls -mint chocolate chip cookies -chocolate oatmeal lace cookies -sugar cookies with royal frosting -marzipan candies (not cookies but still good) -Orange juice frosted twist cookies -pumpkin chocolate chip cookies
This year I want to try to make: -Sarah Bernhardt cookies (Someone posted those on this forum and they look and sound amazing)
try joy of baking and food network websites. I read in a magazine they have a lot of choices with pictures. I am still thinking of thanksgiving so I have yet to focus on christmas cookies.

Pecan Pie Truffles - look so yummy and look easy to make!
Pecan Pie Truffles
2 1/2 cups finely chopped pecans 1 cup graham cracker crumbs 1 cup brown sugar 1/2 tsp. salt 2 Tbsp. maple syrup 1/4 cup almond milk 1 tsp. vanilla 1 package of Baker's Semi-Sweet Baking Chocolate
In a food processor, grind up graham crackers until they are fine crumbs. Note that 1 packages of Keebler Graham crackers equals about a cup graham cracker crumbs. After they have been ground up, add in the remaining ingredients, mix until well combined. Using a plastic sandwich bag, squeeze the filling into balls about an inch in diameter. Place onto a baking sheet lined with wax paper and put it into the freezer for a 2-4 hours.
Before removing them from the freezer, start melting three-quarters of the chocolate on the stove using a double broiler. I simply heat a small amount of water in a larger sauce pan on medium-low heat, and in a smaller pan nested in the larger one melt the chocolate. DO NOT let water get into your chocolate, as it will seize up. Once it is melted well, take it off of the burner and add the remaining chocolate. This tempers the chocolate so it dries with a nice shiny finish once it dries. Dip the balls into the chocolate to coat them well, then put them back onto the cookie sheet to harden.
Note: you can use chocolate chips, but it is more difficult to get them to temper properly. They will need to be put into the freezer to harden the chocolate or they will take a couple hours to dry. Posted by Celeste at 2:06 AM

Our family always made these:
Butter cookies with sprinkles in the shape of trees and stars. Regular and chocolate.
Rugalahs (spelling?)
Scandinavian cookies (shortbread like rolled in nuts and jelly in the centre
Pecan shortbread cookies (I think it is Czech in origin)
Chocolate chip cookies
Corn Flake Green wreaths
Chocolate Lace cookies
Rice Crispy treats
Peanut Butter Blossoms

Thumbprint cookies Butter Spritz Cookies Red/Green Sugar Cookies Toffee bars PB Blossoms Choc Chip with reeses center Pecan tassies Walnut snowballs candy cane cookies meringue with chocolate chips
I make a lot of my batters before hand, everything except the toffee bars and meringue.
