Re: Need some quick Dinner Ideas!!
here's one I do on days where I don't have much time, it's called dump chicken:
Preheat oven to 350
sprinkle some oregano, basil, salt and pepper on 4 chicken breasts. Lay chicken breasts in a 9x13 pyrex
Dump a can of italian flavored diced tomatoes evenly on top of the chicken. Then dump a can of small pitted olives (drained) on top of the tomatoes.
Bake in oven for 30 minutes, shorter or longer depending on the thickness of your cutlets.

Re: Need some quick Dinner Ideas!!
This is so simple, I just made it for DH tonight
Take a baking dish and put a layer of frozen spinach at the bottom (as much or as little as you want) lay chicken tender pieces (can be frozen or defrosted) along the top---I normally place about 4 to 6 pieces for DH. Then top with a jar of brown chicken gravy. Bake in the oven covered at 375. If you would like when chicken is cooked all the way through, remove tin foil cover and top with cheese of your choice - swiss, american ect.... and bake until melted. I normally serve it with bread and a salad but you could also serve with small elbow pasta.

Re: Need some quick Dinner Ideas!!
one of my favorites is from cambells soup website... you just take a 9 x 13 baking dish. put in a cup of uncooked rice, 1 1/3 cups water, a can of cream of chicken soup and some frozen corn or mixed veggies. mix that all up into like a soup... then put the chicken breasts on top of it. cover it and bake it at 375 for about 40 minutes. you can sprinkly some shredded cheese on top, too. sooo easy- and only one dish to clean
also- i can't tell you how much of a love/hate relationship i have with rachel ray for this kind of stuff- lol! i think shes kind of annoying and i hear shes a ***** in real life... LOL but her recipes are so great for quick weekday meals. my husband and i started out cooking by making some of her recipes, and it really does just give you so much confidence in your cooking abilities and shows you how easy it can be to put together a good meal...

Re: Need some quick Dinner Ideas!!
Here's one of my faves - eating leftovers right now actually!!
You need: Pork Chops Strawberry Preserves Raspberry Preserves Blueberry Preserves fresh strawberries
Directions: Preheat oven to 400 degrees. Mix together 1/2 cup strawberry preserves with 1/4 cup of raspberry preserves and 1/4 cup blueberry preserves. Lay the pork chops on a baking sheet and pour the mixture over it. chop up strawberries and place them on top of the pork chops/mixture. bake for 20-25 minutes. the sauce reduces and is yummy!
