Never baked large batches of cookies...

When should I start???? What about baking cookies with fillings...should I do those closer to Christmas???

According to Martha Stewart, you can freeze cookie dough up to 3 months. You may want to make the dough in advance if you are going to be baking in bulk. I did that a coupe of weeks ago and started baking again last night. The dough was fine. This way, you dont have to wait for the dough to refrigerate before you roll it out. I would do the fillings closer to the time you plan on baking.

I'm doing my baking tomorrow - tuesday

tomorrow before work I'm making the dough, and letting it refrigerate overnight. I don't double most of my cookie recipes, and I'm making a lot, so it's going to take a long time.

Monday I have off, so I'm going to roll them out and bake them, and start decorating. Tuesday before work I'm going to finish decorating them. Last year I stored them in cookie tins with glad press n seal wrap and my gingerbread cookies were FRESH for a month.

I'm also making linzer tarts. I'll probably fill them right before I send them.

That is what I am making...I think I am going to try them today...for my mIL b-day tomorrow
