I love Montauk too. If you want something less crowded I also recommend Greenport (North Fork).

My parent's house
In all seriousness there are plenty of places to stay, but if you are going in the summer you may have to stay two nights. Beachcomber, Yacht Club, Montauk Manor, Gurney's, Royal Atlantic, The Albatross. Those are some places, but I haven't stayed anywhere.
