A few of my most recent favorites:
> Chicken kebabs with peppers and onions, grilled. I marinate the chicken in Greek yogurt and dill. > Quinoa salad w/ cucumber, feta and vinegar > Grilled steak w/ side of grilled brocolli and tomato salad (just chop up tomato, add some salt and voila)

whole wheat pasta w/ grilled/roasted veges and pesto
I made a Buffalo chix salad w/ cooked chicken (whatever you have/like) instead of making Buffalo chicken, I found a buffalo chicken dressing, added blue cheese chunks, lettuce.

paninis are so easy- we have a panini maker. I make grilled chicken on cibatta bread.

I think Ribs are pretty easy to make. Rub them some spices, broil them for 12 minutes each side, throw them in the crock pot standing up meat side out, throw some bbq sauce in the crock pot and on the ribs (you don't have to, but I do) crock pot on either high 4-5 hours or low 6-8 hours. Brush with sauce when finished. I have only done high & they are fall off the bone unbelievable yum!!

Breaded chicken or pork chops on the grill are a super easy favorite here. I dip sprinkle on a little seasoning salt then dip in bread crumbs with grill seasoning mixed on and grill.
As a side I love grilling veggies in a grill basket. I usually do potatoes, yellow squash, peppers, onion, and garlic tossed with a little olive oil and some spices. Cover with foil and grill for a good 30 minutes or so until the potatoes are tender.

- BLT's with sliced avocado - Grilled shrimp tossed in buffalo sauce over salad w. bleu cheese or gorgonzola crumbles - Grilled sausage with peppers/onions in a roll - Cold pasta tossed with olives, grape tomatoes, baby spinach, and feta chunks in Greek dressing

We've been on a taco kick lately.
I just pick up the soft taco kit at the store.
And instead of using lettuce and tomatoes, S&S sells a decent size container of guacamole that has tomato and onion already cut up on top, so I just use that.
