No stove or oven til Tuesday- so here's my weeks menu

So there goes all my holiday baking Chat Icon We ran out of propane and can't get a delivery til tuesday.

I was looking forward to being holed up in the house all weekend baking cookies and making truffles and wrapping gifts while it snowed outside- but, no such luck.

Anyway- I have to make do with my crock pot, rice maker, microwave and toaster oven for the next few days.

So I figured I'd post some recipes I'm going to try. I've eaten fast food the past 2 nights- but we can't afford the $ or the calories so I'm going to have to cook.

Tonight- Holiday party @ Villa Lombardi's

Tomorrow (Saturday)-

Sweet and Savory Chicken Stew

What You Need:

4 chicken breasts, boneless and skinless, cubed
2 carrots, peeled and cubed
1/2 C chicken broth
1 T brown sugar, packed
2 T soy sauce
1/2 tsp ground allspice
1/2 tsp hot pepper sauce
1 T cornstarch
1 (8 oz) can pineapple chunks, reserve the juice
1 red bell pepper, diced

How to Make It:

Layer the chicken in the bottom of the crock pot.
In a large mixing bowl mix together the broth, brown sugar, soy sauce, allspice and pepper.
Pour into the crock pot.
Add the carrots.
Cover and cook on low 7 hours.
When ready to serve place the cornstarch in a mixing bowl.
Add the reserved pineapple juice and blend well until smooth.
Pour over the chicken.
Add the pineapple and bell peppers.
Cover and switch heat to high.
Cook 20 minutes longer.
Mixture should be thick and bubbly before serving.

Tip:

The pineapple and brown sugar mixed with soy sauce and hot pepper sauce gives this recipe a sweet but savory taste. Serve over rice for a great main course.

Sunday-

Crock Pot Kielbasa & Sauerkraut
Recipe 6½ hours | 20 min prep

SERVES 8

1 medium onion
2 lbs kielbasa (2 kielbasa)
2 (32 ounce) packages sauerkraut
1/3 cup brown sugar
1 cup water
1 cup apple cider
Slice 1 onion into thin strips and caramelize.
Drain and rinse sauerkraut.
Slice kielbasa into 1-inch lengths.
Combine water, cider and brown sugar.
Combine all ingredients well in crock pot.
Cook on high 6 hours.

With microwaved potatos and vegetables (ick- but whatever works)


Monday-

Mini Pizza Bagels (in the toaster oven) and leftover minestrone soup from the freezer

Tuesday- YAY!!! I can cook again! Roasted Chicken with Mashed potatoes and roasted broccoli

Wednesday- Pasta/Ricotta/Sausage/Breadcrumb bake (I never made this last week so I still have all the ingredients)

Thursday-
Grilled Cheese and Tomato Rice Soup

Friday- Will eat at work party then nosh at my Aunt's house later on.
