NPR... cupcake n cookie batter
Tomorrow I am baking about 50 cupcakes, and about 30 cookies. I want to get some opinions first tho...
Usually I just make up the batter... and then start baking. Obviously, the sugar cookies will need to sit in the fridge for an hour first... but usually that's it. Now, our oven just recently broke, so I need to go to my MILs tomorrow. To make my life easier, I was thinking of making all the batter tonight...so tomorrow I will just need to get the baby ready, and head out. But I dont know how well the batter will be the next day ... Should I only do the sugar cookie batter tonight and then in the morning I'll just whip up the batter for the cupcakes? Advice please...

You can do that but the batter will get fluffy-kinda like when you leave pancakes in a batter bowl...Ive done it before
But it only takes 5 minutes to whip it up in the am

Yeah, I never have left batter just sitting around...I just tend to use it all right away. I guess I'll start of the cookie batter since that does need to sit in the fridge either way. I have to be at my MILs by 10 so I don't want to be making cookie dough at 8/8:30 in the morning LOL. I'll leave the cupcake batter for the morn! Thanks!!!
