official 2008 CSA (food co-op) thread
I thought it would be a good idea for all of us who belong to a CSA to share what we get every week as well as share recipes and ideas on how to use the items.
So here is our official thread.
Mine started yesterday (goldenearthworm) and I got Rhubarb, radishes, arugula, spinach, boston lettuce & baby arugula.
Right now I am making strawberry/rhubarb pie and making some compote.
Here is the pie recipe:
INGREDIENTS 1 egg 1 cup sugar 2 tablespoons all-purpose flour 1 teaspoon vanilla extract 3/4 pound fresh rhubarb, cut into 1/2 inch pieces 1 pint fresh strawberries, halved 1 (9 inch) unbaked pie shell TOPPING: 3/4 cup all-purpose flour 1/2 cup packed brown sugar 1/2 cup quick-cooking or rolled oats 1/2 cup cold butter
DIRECTIONS In a large mixing bowl, beat egg. Add the sugar, flour and vanilla; mix well. Gently fold in rhubarb and strawberries. Pour into pastry shell. For topping, combine flour, brown sugar and oats in a small bowl; cut in butter until crumbly. Sprinkle over fruit. Bake at 400 degrees F for 10 minutes. Reduce heat to 350 degrees F bake for 35 minutes or until golden brown and bubbly. Cool on a wire rack.

Freshly picked Organic Broccoli and Broccolini, Beets, Swiss Chard,Escarole,Italian Parsley and Cilantro.

Ours started a few weeks ago. So far we've been getting a LOT of lettuce, broccoli, radishes, onion and mushrooms. And some rhubarb and strawberries.
So far, I've just been making myself a nice big salad for lunch everyday with the lettuce, broccoli, radishes, onion and mushrooms.
I made some yummilicious lowfat, low sugar, whole wheat rhubarb muffins - I'll post the recipe when I get home tonight!
Hey, does anyone have a good shitake mushroom recipe? We got some this week and I don't know what to do with them.

I got my box of veggie today and it was packed!!!
I got a huge bag of brocollini, 2 big heads of escarole, swiss chard, beets, sage, parsley, cilantro and even a small bunch of daisies!!
I have never made beets before. Anyone have a suggestion on how to prepare them?

Beets are one of my favs. I usually cut the stems/greens - wash them up then put them in a pot - cover with water and boil until you can get a knife through them.
Once they are soft, run under cold water and the skins will come right off.
Then, slice them up - eat them plain or on a salad with some goat cheese, etc...
I usually eat them plain with a little bit of salt!

No its one price for the whole season and you pick up a box of veggies every week.. some places have half shares that you pick up every other week too. The one I am doing is $495 for a full share and $255 for a half share ( or you do what I did and split a full share with a friend and you alternate weeks)

I was JUST looking for something like this on LI... anyone know of store based co-ops? I know there are a few in bklyn but I totally dont want to have to commute that far for my shift.

6/10 - This week I got
~strawberries ~broccoli ~swiss chard ~Kale ~boston lettuce ~red leaf lettuce
I am going to try this recipe:
Swiss Chard Recipe Print Options Print (no photos) Print (with photos) Ingredients 1 large bunch of fresh Swiss chard 1 small clove garlic, sliced 2 Tbsp olive oil 2 Tbsp water Pinch of dried crushed red pepper 1 teaspoon butter salt
Method 1 Rinse out the Swiss chard leaves thoroughly. Remove the toughest third of the stalk, discard or save for another recipe (such as this Swiss chard ribs with cream and pasta). Roughly chop the leaves into inch-wide strips.
2 Heat a saucepan on a medium heat setting, add olive oil, a few small slices of garlic and the crushed red pepper. Sauté for about a minute. Add the chopped Swiss chard leaves. Cover. Check after about 5 minutes. If it looks dry, add a couple tablespoons of water. Flip the leaves over in the pan, so that what was on the bottom, is now on the top. Cover again. Check for doneness after another 5 minutes (remove a piece and taste it). Add salt to taste, and a small amount of butter. Remove the swiss chard to a serving dish.
Can anyone recommend any others???

Also for beets, try roasting them - wrap them in foil and roast in a 400 degree oven for about 45 mins to 1 hr 15 depending on the size of the beets. Peel them and slice in a salad with blue cheese and walnuts - or eat them with a little olive oil and salt and pepper. You can also eat the beet greens - they have a similar taste to arugula and can be prepared the same way.

I'm curious how the Swiss Chard recipe turns out! I'm planning on making it later this week. The boston lettuce was delicious in my salad last night. It's a shame the broccoli was so little due to their worm issues

The swiss chard is pretty good!
This is REALLY yummy too!! (I even got my 2 year old to eat it!!)
Roasted Kale with Sea Salt 4 cups firmly-packed kale 1 Tbsp. extra virgin olive oil 1 tsp. good-quality sea salt, such as Maldon or Cyprus Flake Preheat oven to 375 degrees F. Wash and trim the kale: Peel off the tough stems by folding the kale leaves in half like a book and stripping the stems off. Toss with extra virgin olive oil. Roast for five minutes. Turn kale over. Roast another 7 to 10 minutes until kale turns brown and becomes paper thin and brittle. Remove from oven and sprinkle with sea salt. Serve immediately.
Makes 2 servings.
Per serving: 186 calories, 14 g fat (2 g saturated fat), 0 mg cholesterol, 13 g carbohydrate, 3 g fiber, 4 g protein, 412% vitamin A, 268% vitamin C, 18% calcium, 13% iron

Picked up my CSA from Garden of Eve tonight.. I got
1 head red lettuce ($2.25) 1 head green lettuce ($2.25) 1 bunch radishes ($1.50) 1 bag arugula ($3) 1 bag mesclun lettuce ($3) 2 baby leeks ($2) 1 swiss chard 1 bunch local but not ours, not organic asparagus ($4) TOTAL: $19
Fruit share: 2 quarts strawberries (1 organic and 1 low spray)
I also for a dozen eggs and some snow peas.
