ok monday night mania: cornmuffins
moving on from butter...i'm on a kick to bake a great corn muffin. i have no idea why.
i bought corn meal. followed the recipe on the can and they suck. i mean i followed it to the grain.
what am i doing wrong? does anyone have a restaurant quality failproof recipe?

I find the 50 cent box of jiffy corn muffin mix makes some seriously good muffins or bread.
Also the huge box at Costco (forget the name) is pretty good too.

dh is advocating for the box of jiffy as well! i'm trying to avoid it. i have to look at the ingredients list.

Did your recipe use a can of creamed corn?
I find that makes a huge difference.

no, and i haven't seen that in any online recipes at all. will give it a shot thanks. what size can about do you use?
