Ingredients:
cherry tomatoes
avacado
red pepper
red onion
shredded chedder
tortillas
lemon juice,
salt and pepper
Bird's eye steam fresh corn.


For the guac.
cube the tomatoes, half the onion, and avacado, stir in lemon juice, salt and pepper, set aside!

Dice the pepper and other half of the onion. Sautee. While it is cooking, microwave the corn. When done, add about a third of the bag to the pepper and onion mix. Put in a bowl.

Okay, heat a bit of oil in a frying pan. Add an 8 inch tortilla. After 30 seconds, flip. When it bubbles, flip again, add cheese and the pepper/onion/corn mix. fold it in half. Flip the entire quesadilla agin and cook for another minute or so. Repeat.


Serve with the guacamole, some salsa, the rest of the corn (with a pat of butter and salt!)

You can add chicken if needed, but this was filling enough!
