Re: pancake help
The pan/griddle needs to be preheated first. They way I test if the pan is the right temperature is if you splash a little water on the pan and the water dances you are good to go. If the water sits there...its not hot enough yet and if the water burns really quickly...the pan is to hot. Turn down and wait a few minutes and try the water test again.
and I always have a paper towel handy with a butter in the center to wipe down the pan in between each batch.
I also use a ladle to pour the batter.
Good luck!

Re: pancake help
Don't overwork the batter - stir until it's just combined.
If you have a griddle, that's really good to use.
Flip when the edges start to bubble (you can peek underneath to make sure they are golden).
If you're making a lot, I like to keep them warm at around 250 in the oven while the rest cook...

Re: pancake help
I use bisquick and follow the recipe on the box and they usually come out OK. I like to make waffles more.

Re: pancake help
I always add either bananas or chocolate chips to the batter...mmmmm.
I use a griddle to cook mine, they come out better that way. And I spray the pan with butter spray between each batch. Also, only cook them until their a light golden brown.
Good Luck! For me, pancakes took forever to master. I can make complex meals in a flash, but breakfast has always been a challenge for me

Re: pancake help
very hot pan.... water dancing hot.... don't be cheap with the grease.... (my rationale is that there's no way to make a pancake healthy anyway )
don't add too much water to the batter. it should be thick like a shake. dispense into the pan with a ladle... don't flip until the pancakes have some small bubbles rising near the middle.
flip with a large flat spatula. (I lift, add a little butter or oil, and then flip onto the pan)
I also add bananas or frozen blueberries in the raw batter..... yum!

Re: pancake help
make sure the pan is nice and hot but actually cook the pancakes on medium so they cook through w/o burning the bottom.
i always add to ANY batter or pancake mix: 1 tablespoon of vanilla extract, 2 tablespoons of cinnamon and sugar, and 2 tablespoons of heavy cream
i never use PAM - just butter.
HTH!
oh and add blueberries sometimes too

Re: pancake help
Besides what has already been mentioned, don't use anything that says just add water. Use a mix that needs the egg, water and other ingredients...much tastier. Oh and don't forget lots of butter!

Re: pancake help
#1 Separate the egg yolks and egg whites. Follow the recipe and mix the egg yolks in with the bater as the recipe calls for. In a separate bowl, whip the egg whites until you form stiff peaks. Fold into the mixed batter. Then ladle 1/4 cup of batter into the pan. The pancakes will be soooo airy and fluffy.
#2. The Butter Way Spay griddle/pan with PAM Butter Flavor then Melt a stick of butter. Put 1 tbs of butter onto griddle and spread around with a papertowel. Wipe clean after each batch. Repeat after each batch --- you do not want to 'fry' the pancakes in a ton of butter, you just want the griddle to be well greased.
#3 Heat Source Cook your pancakes on medium low not medium high ... let them take their time cooking through --- otherwise you will end up with burnt on the outside and raw on the inside.

Re: pancake help
Decrease the amount of water in the recipe and put in some plain seltzer instead - it makes them more fluffy.
