Pasta with Chicken and veggies....
I'm trying to figure out what to do with our garden veggies....any recipes for a pasta primavera dish?!?! I have lots on Zucchini, yellow squash, broccoli, tomatos... Help!

A quick dish.
Chicken: Season chicken with Grill Seasoning and Grill Chicken until cooked. Let rest for 10 minutes then slice into bite size pieces.
Veggies & Sauce: Sautee in olive oil & garlic until veggies are crisp not mushy. Add either some pasta water or chicken broth and simmer for 2 minutes. Add COOKED Pasta of your choice to combine and sprinkle with parm cheese.
You can add half and half or light cream when you add the liquid if you want a creamy sauce ...

I normally cook chicken in a big pan with garlic and oil then after chicken is cooked through I sautee veggies in the same pan while cooking pasta to directions---al dente. When pasta is done and chicken is cooked and veggies are still crisp I toss the cooked pasta in the same pan with the chicken and veggies. I then throw in a little bit more garlic, extra virgin olive oil and a little bit of pasta water to coat. Cook ingredients on low until they are combined--2 to 3 minutes-- and then serve with home made garlic bread. very simple and quick.

i like to make pasta with roasted veggies.... (i usually use peeled eggplant, red & green peppers, and onions... but i'm sure it would be good with any veggies!)
i cook the pasta according to the directions... and roast the veggies in the oven with some extra virgin olive oil and finely chopped garlic until they're tender.
after the pasta is done... add the roasted veggies, some finely chopped fresh basil, oregano, and thyme.... and some bottled sundried tomatoes (with a little of the oil it comes in for flavor!). just toss & serve...
