peanut butter mousse cake honor of girl scout


Peanut Butter Cookie Mousse Cake Epicurious | March 1999

This recipe was developed by Houston pastry chef Pamela Manovich, with the help of Girl Scout Laura Watkins.

Yield: Makes one 8-inch cake


For peanut butter mousse
1 Box Peanut Butter Sandwich Girl Scout cookies
1 1/2 cups cream cheese
1 1/2 cups peanut butter
1 1/2 cups sifted powdered sugar
1 cup heavy cream

For ganache
1 12 ounce bag Hershey semi-sweet chocolate chips
1 cup heavy cream


Make peanut butter mousse:

Crush cookies in food processor and set aside.

Soften cream cheese, add peanut butter, and mix well. Add powdered sugar. Whip cream until soft peaks form. Fold whipped cream into peanut mixture and set aside.


Make ganache:

Place chocolate chips in bowl and set aside. Heat heavy cream until it starts to boil. Pour over chips and stir.


Assembly:

Use an 8-inch springform pan. As a first layer, spread half of the cookie crumbs on bottom, then pour on a thin layer (about 1/3) of ganache, enough just to hold cookie crumbs. Place half of the peanut butter mousse in the pan and spread over the ganache. Place the remaining cookie crumbs on top of the mousse. Place a third of the chocolate on top of the mousse. Place remaining mousse in pan, and finish cake with remaining ganache. Place in freezer for one hour. Remove from freezer, take out of pan, and serve.

That sounds SO good.

Here's my concern: I do it wrong (somehow) and waste an entire box of GS cookies! Chat Icon I'm afraid to try it!!

I sooo want to make this but I have a queston. For the ganache, do you need to let it firm up at all or just pour it on top of the cookie crumbs warm and then the peanut butter mousse on top of that?

Won't they mix together?

you know what? I have made this for years and realized I never layered it, I did the ganache then the mousse n never sprinkled cookies on top! lol.
I have to make this the correct way now! its probably even better like this because it rocks when I screw it up!

I always made the ganach n it saw awhile so I guess I would let it chill being its supposed to be layered.

As for screwing up n not having the cookies? I always buy another box, lol
I only buy them for this n thats it.
Let me know what u think. Its verrrry low fat, ha!
