Penne a la Vodka ??
Hi Ladies, Dh and I are entertaining on Saturday night, I would love a great recipe for Penne a la Vodka Thanks so much!!!

I am sorry, I can't remember who posted this originally, I had copied it and use it all the time. It's delicious. I also add some grated cheese.
1 1/2 cup tomato sauce 1/4 lb. Pancetta or Prociutto, chopped finely (this is a little expensive and really not nessecary. you can leave it out.. I usually do!) 1/2 cup heavy (whipping) cream 1/3 cup vodka 1/4 cup butter 2 to 3 cloves chopped garlic 1 small red onion, chopped small
1lb. penne or rigatoni
Melt butter in a large skillet. When butter is hot add pancetta or Prociutto, garlic and onion. Saute over medium heat. Add vodka and stir until vodka is reduced by evaporation. Add tomato sauce and stir heavy cream and season with salt and black pepper. Simmer, uncovered for approximately 8-10 minutes.
Prepare Pasta in large pot of salted water. Add penne or rigatoni and cook pasta until desired doneness. Drain pasta and add to skillet with sauce. Toss pasta and sauce over medium heat until the sauce coats the pasta.
Optional or alternate taste: Pinch of red pepper flakes added during saute.
4-6 servings.

Vodka Sauce
Onions Sundried Tomatoes Egg Yolk 2 pints of heavy cream Vodka Parmesan Cheese Tomato Sauce Chicken (optional)
Saute onions & sundried tomatoes in a saute pan. (Set aside)
In a sauce pan, add one egg yolk, 2 pints of heavy cream (1 light; 1 heavy), gradually add in parmesan cheese until desired thickness, one small shot of vodka, add tomato sauce until pink. Add in onions & sundried tomatoes. (Add chicken if you like)
Serve over pasta.

i made this tonite and it was deelish!

Ok stupid question, typically when you cook with alcohol it will burn when you mix it with other things in the sauce, do you know if when I pour the vodka the rest of the sauce will it burn or catch on fire?

If you have a gas stove - I suggest lifting the pan when you pour the alcohol and then rest the pan back down. We had an incident once when we did not do this. Let's just say a flame that charcoaled the stove roof thingy!!
