PENNE ALA VODKA
1 1/2 cup tomato sauce 1/2 cup heavy cream 1/3 cup vodka 1/4 cup butter or EVOO 2 to 3 cloves chopped garlic 1 small onion chopped (optional) grated cheese (I use a bunch) 1lb. penne or rigatoni
Melt butter in a large skillet. When butter is hot add garlic and onion.?Saute over medium heat until soft. Add vodka and stir until vodka is reduced. Add tomato sauce and stir heavy cream and season with salt and black pepper.?Add grated cheese. Simmer, uncovered for approximately 8-10 minutes.??Prepare pasta in large pot of salted water. Add penne or rigatoni and cook pasta until desired doneness. Drain pasta and add to skillet with sauce. Toss pasta and sauce over medium heat until the sauce coats the pasta.??Optional or alternate taste:?Pinch of red pepper flakes or add pancetta to garlic in the beginning.

This is the one I make!! I add proscuitto!!

my recipe is similar to the one above this post... but for a different twist I used Shallots instead of onion (GREAT FLAVOR!) and sometimes instead od heavy cream I use Marsapone Cheese!
I also always add proscuitto!

I use a similar recipe...but add prociutto ham to the onion, butter mix as well....

Mine is very easy and I've received so many compliments on it. It's from a Northern Italian cookbook.
Melt 1/2 stick butter in a large skillet. Once melted, sautee 1/4 lb. proscuitto or pancetta (I use imported prosciutto) for about 4-5 mins., until almost translucent. I then add 1/3 cup vodka and let the alcohol burn off (about 4 mins). Then add 1/3 cup heavy cream and 2 cups of traditional Ragu. (I've used homemade sauce in the past and my family noticed a difference and didn't like it, go figure !!)
