PLEASE HELP
My husbands father and step mother are coming over for dinner on Sunday. I want to make something easy but impressive for them for dinner. I have 2 small kids so it can not be elaborate. Last time I made homemade pizza and antipasta salad. It was good but I want to try something else. Please help!!

PLEASE HELP
Chicken with black olives, artichokes, tomatoes over couscous.
Cook some chicken (bite size pieces) - I like to boil them so they don't dry out. Add a can of diced tomatoes - any flavor- to the drained chix Add drained black olives and a jar of artichokes in oil. Don't add all the oil, just a little. Cook the couscous to package directions - found out mine tasted better with oil. You can add some of the artichoke oil if you want.
You can give your kids the chicken and couscous and serve the whole thing to everyone else. Very simple, quick and tasty

I was going to recommend this as well! It is even more "impressive" looking if you drizzle the top with a balsamic reduction right before serving!

I would go with simple roasted or steamed broccoli with olive oil and garlic, or asparagus and perhaps a rice pilaf. I have also done mashed potatoes with this, but they are a little heavy for the summer. Good luck with your dinner party!

I served it with a cold orzo salad but it was a little too much acidity for one meal. I think I'd keep it simple with a green veggie like asparagus and some fresh italian bread.

roasted chicken & vegetables!
SO easy
marinate chicken thighs and legs in a little olive oil, garlic, and thyme
cut up any veggies you want, I usually use:
carrots, broccoli, onion, mushrooms, little potatos or sweet potato
add fennel and bake it all in a large pyrex.
you can also make rice or pasta with it

Just wanted to say good on you for trying to impress them.... I make burgers and hot dogs when my inlaws come visit!
What about a lasagna with salad? I like to go all out on dessert and keep it simple/ semi-homemade for meals
