please help me get my cat to stop scratching my leather couches!!!!!

i have a former stray cat. she is the love of my life and i'm still in the process of socializing her.

she scratches our ugly cloth couches so i've covered them with sheets. last night at 3am DH jumped out of bed because he heard her scratching our nice leather sofas!!!!! (keep in mind we bought them WAY before we thought we would get a cat) so now they're covered too and my house looks like the linen closet exploded.

she has 2 scratching posts already that she won't use. i've showed her how to do it but she won't. so i just bought a tall rope post and i pray she uses it. i don't know what else to do!!!

spritzing her won't work because she runs as soon as i get up from the chair. i'd never catch her. giving her treats won't work because she doesn't like them. her front and back nails are clipped weekly. i don't believe in declawing and that would be an absolute last resort.

i need help please!!!
