definitely a honey ham with either potatoes and a vegetable or a ham with lasanga i'm not too sure yet

I hosted Xmas and had Lasagna, so I think I am goingt o skip it this holiday...

I am not cooking (hopefully next year though!), but my MIL is making
Arrival: Cold Antipasta
First Course: Penne with Amatriciana Sauce (Link to Sample Recipe)
Second Course: Herbed Rib Roast (Recipe) Mixed Greens, Fenel, Oranges & Goat Cheese w/ Balsamic Vinegarette (you can add roasted or mashed potatoes and vegetables here - we decided to keep it 'light' since were not a lot of people this year)
Dessert: Farina Pie Rice Pudding Italian Cheese Cake Brownies (for the kids)

I think I'm doing Easter this year too. I think I'll make rack of lamb, asparagus, roasted potatoes and mixed green salad with goat cheese, beets and walnuts.

Well we got out of hosting Easter this year In exchange for a father/mothers day or a birthday and Xmas Eve (which my husband would rather do anyway) BUT my menu would have been:
ham scalloped potatoes corn salad green beans ? some other side dish homemade rolls
and homemade cake and maybe cookies for dessert.
