this is my sister's and i think it's delicious. she might add some more butter and sausage than the recipe calls for and she triples it.



Basic Turkey Stuffing



¾ cup of water

3 cups dried bread cubes

4 oz. crumbled sausage, cooked (I have used Italian sausage and Jones’s Breakfast Sausage-both varieties came good)

If you use Italian sausage, remove meat from casings and brown.

¾ cup diced red apples, peeled

½ cup chopped onion

½ cup chopped walnuts

½ tsp. rubbed sage

1 tsp. rosemary

2 cloves minced garlic

1/3 cup of butter

Heat water and butter until butter melts. Combine bread cubes and melted butter and water. Add sausage, apples, onion, walnuts, sage rosemary and garlic and toss until well blended. Spoon into casserole dish. Cover and bake alongside turkey for 45 minutes. This recipe can be doubled or tripled (as I do)and can be made a day ahead but baked on Thursday. Enjoy and have a wonderful Thanksgiving!

I make the cornbread about 5 days before then I cut it into cubes and let it dry out for 2 days.

1 1/2 loaves cornbread
2 medium red onions, cut into 1-inch pieces
6 shallots (about 1/2 pound), cut lengthwise into sixths
5 leeks (about 1 pound), white and pale green parts only, halved lengthwise and cut crosswise into 1/2-inch thick pieces
3 celery ribs, chopped
1 cup packed fresh flat-leafed parsley leaves, chopped
1 tablespoon chopped fresh sage leaves
2 teaspoons chopped fresh thyme leaves
1 stick unsalted butter
3/4 pound vacuum-packed or canned whole chestnuts
3 1/2 cups chicken broth

Preheat oven to 325 degrees.
Cut cornbread into 1/2-inch cubes and in 2 large shallow baking pans bake in middle of oven until just dry, about 20 minutes.

In a large heavy skillet cook red onions, shallots, leeks, celery, herbs with salt and pepper to taste in butter over moderate heat, stirring, until onion mixture is golden brown, softened, about 25 minutes.

If using canned chestnuts, rinse and drain. In a saucepan simmer vacuum-packed or canned chestnuts in 2 cups broth 15 minutes.

In a large bowl, toss together bread, onions, chestnut mixture, remaining 1 1/2 cups broth and salt and pepper to taste and cool completely. Stuffing may be made up to this point 1 day ahead and chilled, covered. Bring stuffing to room temperature before proceeding.

To cook all or part of stuffing outside poultry: In a shallow baking dish bake stuffing in preheated 325 degree oven 45 minutes (for moist stuffing, bake covered entire time; for less moist stuffing with a slightly crisp top, uncover halfway through baking time).

1 pound Bob Evans® Savory Sage or Original Recipe Sausage Roll
1 large onion, diced
3 stalks celery, diced
1 (14 ounce) package cubed stuffing
1 teaspoon poultry seasoning
2 1/2 cups chicken broth
1/2 cup melted butter
1/2 teaspoon sage
Directions
1.In a large skillet over medium heat, crumble sausage. Add onion and celery and cook, stirring occasionally until sausage is brown. In a large bowl, place cubed stuffing. Add sausage mixture. Sprinkle with poultry seasoning. Pour broth and butter over the top and toss to combine. Spoon mixture into a 9x13 inch baking dish; cover. Bake at 350 degrees F for 45 minutes.

(I stuff in my turkey instead)~

I made this stuffing for the first time last year - and I am making it again this year - it is from the South Beach Diet. It is FABULOUS!!!



Turkey sausage and pear stuffing
3 teaspoons extra-virgin olive oil, plus extra for baking dish
1 (3/4-pound) loaf whole-grain bread, cut into cubes (4 cups)
1 pound sweet Italian-style turkey sausage
1/2 cup lower-sodium chicken broth
4 celery stalks, coarsely chopped
1 medium onion, coarsely chopped
1 Bosc pear, coarsely chopped
1 tablespoon chopped fresh sage
1 large egg, lightly beaten
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Instructions
Heat oven to 350 degrees. Lightly oil a 9- by-13-inch baking dish. Place bread cubes in a large bowl.

Remove sausage from the casings and break into 1/2" pieces. Heat 1 teaspoon of the oil in a large skillet over medium-high heat. Add sausage and cook until browned, about 3 minutes. Transfer to the bowl with bread cubes.

Return the skillet to the heat. Add 2 tablespoons of the broth and, using a wooden spoon, scrape any browned bits of sausage from the bottom of the skillet. Add the remaining 2 teaspoons oil, celery, and onion; cook until softened, about 6 minutes. Add pear and sage; cook 2 minutes more.

Transfer vegetable mixture to the bowl with the bread and sausage. Add egg and stir to combine. Add remaining broth, parsley, salt, and pepper; mix well. Spread stuffing evenly in baking dish. My dad's stuffing is amaaazing...it was originally my grandmother's recipe:

24 oz. White bread
l Lb. Jimmy Dean Regular sausage meat
1 large onion, chopped
1 14 - 15oz. Can chicken broth
Flat leaf parsley (handful) a few tablespoons - chopped
4 tsp. Bell’s seasoning
Salt & pepper
Butter & vegetable oil
1 stalk of celery, chopped (optional)

Preheat oven to 325 degrees

In a large mixing bowl, break bread and sausage meat
Saute onion and celery in butter and oil
When well caramelized, add to bread. Add parsley and seasonings. Mix well and add chicken
broth to moisten. If you want it more moist, you can add a little water.

Mixture can be placed in turkey or an oven proof bowl. I use a bowl, cause I feel the turkey gets
overcooked trying to get the stuffing to the proper temperature.

If using a bowl, cover with aluminum foil for first hour. Uncover and cook till top is well browned

I usually make a double batch so double everything

I don't have exacts but this is DH's family recipe.

saute celery and butter in pan, add lots of thyme, set aside
saute ground beef
add celery mixture to beef until combined
add beef/celery mixture to bread that has been broken into pieces.
bake in bird or in a separate pan

thats it! its so yummy!!!
