In Sayville there is 21 Main (great steaks) and Cafe Joelle (nice atmosphere, wonderful food).
Aji in Bay Shore has some of the most outstanding sushi I've ever had. Fat Fish in Bay Shore has amazing food.. But that's only if you are willing to go a little more west in Suffolk.
Port Jeff has Pasta Pasta (sister to Cafe Joelle) - with good food and some fantastic wine. Pace's Steakhouse is also in Port Jeff. Also - although I haven't been there personally - I've heard 5th Season in Port Jeff is wonderful.

Definitely go to The Country House in Stony Brook. AMAZING decor and food! Totally romantic!

DH and I went to 21 Main last week and it was delish but on Sunday we went to Starr Boggs in West Hampton Beach...AMAZING! They are closing on the 25th for the season though. Not sure when your anniversary is but we really enjoyed it there. I told DH i want to go back before it closes next weekend
