if i had to chose between the 2, id go w/tan...personally i find gray a depressing color. did you consider any other colors besides those 2?

i like tan(the darker tan color) w/black shutters.
I don't like grey.
There is a grey house w/black shutters & a red door near my house, its really pretty, but I would never pick it.

We're residing our house very soon, and are going through the same dilemma. Is there a reason you are going with black shutters? It's amazing what a difference shutter colors make. Dark color shutters darken the color of the house, while lighter colors lighten the color. We currently have tan siding on the back 3 sides of the house, with dark brown trim (no shutters), which look nice. Red shutters look good on certain houses and shades of tan, too. Almost any color goes with grey.
