Pork dishes for Xmas dinner for 15 people!! Help Ladies!!! (updated)
Ok so just found out that im hosting Christmas this year for 15 adults and 5 children!! Now if I can actually find space for a dinner table... I need help my meat dish.
Traditionaly we eat pork on xmas day. I don't cook pork often and Im at a loss with such a huge amount of people. What cut of pork..how many lbs. etc I need your advice please!!!

A stuffed pork loin. This recipe serves 16 ppl.
Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce
3 tablespoons olive oil 16 whole peeled garlic cloves 2 tablespoons minced garlic cloves 1 (8 pound) whole boneless pork loin, patted dry, at room temperature Salt and freshly ground pepper 3 tablespoons minced fresh rosemary (snip with scissors), divided 16 dried apricots (or similar amount of your favorite dried fruit) 1/3 cup dried cranberries Heavy kitchen string or twine 1/4 cup apple jelly 1/4 cup port 1/2 cup chicken broth 2 tablespoons apple jelly 2 teaspoons cornstarch
Directions
1.Adjust oven rack to upper-middle position and heat oven to 250 degrees. Heat oil in a small skillet over medium-low heat. Add whole garlic cloves and cook, stirring occasionally, until soft and golden, about 5 minutes. Remove with a slotted spoon; reserve oil.
2.Turn pork loin fat-side down. Slit lengthwise, almost but not quite all the way through, to form a long pocket, leaving a 1/2-inch border of unslit meat at each end. Brush cavity with some of the reserved garlic cooking oil, and sprinkle generously with salt and pepper and 1 Tb. of the rosemary. Line cavity with sauteed garlic and apricots; sprinkle in cranberries. Tie loin together with kitchen twine or heavy-duty string at 1 1/2-inch intervals.
3.Brush with remaining oil, and sprinkle generously with salt and pepper. Set roast, fat-side up, diagonally or curved (so it fits) on a large, lipped cookie sheet or jellyroll pan. Warm 1/4 cup apple jelly along with the minced garlic and remaining rosemary. Brush mixture onto meat.
4.Roast until a meat thermometer stuck into the center registers 125 to 130 degrees. (Start checking at about 1 1/2 hours.) Remove from oven; raise oven temperature to 400 degrees. Brush loin with pan drippings, return to oven, and continue to roast until the loin is golden brown and a meat thermometer stuck into the center registers 155 to 160 degrees, about 20 minutes longer. For even more attractive coloring, broil until spotty brown, 3 to 5 minutes.
5.Let roast rest 15 to 20 minutes; transfer to a carving board. Stir juices around pan to loosen brown bits. Pour through a strainer into a small pan, and stir in port, chicken broth and remaining 2 Tbs. of jelly; bring to a simmer. Mix cornstarch with a couple of tablespoons of cold water; whisk into sauce. Simmer until lightly thickened. Slice pork and serve with a little sauce.

I don't ever cook meat except for chicken & turkey.
last Christmas we had more compnay than usual, so I decided to make a pork roast. DH picke dit up, I don't know what it was..I think a pork shoulder?? Is that what Pernil is made out of..that's what we got.
Anyway..I just put it in my crockpot.. Ihave a BIG one..with potatoes, carrots, celery & just my own mix of seasonings..a little water at the bottom.
I don't eat pork, but they raved about it. Everyone sat there after they were done eating, just picking meat off it.

KISS!!!! keep is simple sexy
a nice pork tenderloin (I LOVE THEM from fairway) rubbed generously with the following.
dijon mustard and a paste made with
minced garlic gloves rosemary (fresh or dried) kosher salt olive oil.
I mix those togther and mash them into a paste. I rub along with the mustard generously all over the tenderloin and place into a roasting pan.
I thinly slice green apples and put on top.
add some diced apples and some white wine to the bottom of the roasting pan.
roast until it's done (use a meat thermometer)
it's really delicious...the pan juices make a great little sauce...and it's beyond easy!

I would go with Ophelia's recipe for the pork roast or I would do a fresh ham. When I make a fresh ham, I make a paste out of:
dijon mustard brown sugar a little bit of minced garlic, not too much
First, I score the ham, criss-crossed. I massage the paste into the ham. In each of the X's where I made the criss-cross I put a whole clove. I use toothpicks to stick pineapple circles onto it. I pour white wine in the bottom of the pan with chicken broth and spoon it over the ham every now and then.
Make sure there is always liquid in the bottom of the pan, even if you have to put a little water in the bottom.
Bake according to the directions on the ham (duration/lbs, etc.)

I do the same minus the apples. I love pork tenderloins they are delish! Make sure not to overcook the pork because it becomes dry quickly. I usually take mine out of the oven around 155degrees and then tent with foil for about 10 minutes before slicing.

I was just going to say that, 4 or 5 pieces.
I am eyeballing Fairway b/c they put their tenderloins on sale for $2.99/lb sometimes and they are great!
ETA: if a boneless pork roast is easier to find, you can use that too. NOT pork shoulder. you want center cut meat.
I would figure 3 people per pound, so I'd get 5-6 lbs of meet. maybe a little extra!

I made a roast pork last year. Easiest thing ever. Put the pork roast in a roasting pan and throw in bags of sauerkraut (you can also top with apple slices). Everyone inhaled it. I served it with roasted potatoes, carrots, creamed spinach and different types of bread.

I think you got the pork loin, it is different than the tenderloin but tasty as well. Tenderloins are small and usually come 2 to a package and weigh about 1 to 2lbs each.
