Pork Roast
So, I just had to share in case anybody was interested-- I just found the most perfect way to cook a pork roast (I used a pork loin, but I think it would work with a decent size pork tenderloin as well)--- I put a rub on it (any rub will do- but I used a combination of pepper, rosemary, parmesean cheese, garlic powder and salt-- put it quickly through the my little food processor). Anyway, for the cooking method (which I found online but had my doubts about), I set my oven to 500 degrees. When it was preheated, put the roast in for 5.5 minutes for every pound (I had just under a 3 pound roast so cooked it about 15 minutes)- then turned the oven oven and did not open the oven for an hour. Took the roast out, let it sit for 5 minutes and cut it. It was PERFECTLY cooked and extremely juicy. The reviews about this technique raved about it, and now I see why! Bon Appetite!

I have done something similar to this with a roast beef. Will need to tory it with pork! I am always drying out my pork!
