Crab Ceviche
-------------------
INGREDIENTS:
1 (8 ounce) package imitation crabmeat, flaked
1 tablespoon olive oil
1/2 bunch cilantro, chopped
1 red onion, finely chopped
2 large tomatoes, chopped
3 serrano peppers, finely chopped
2 limes, juiced
salt and pepper to taste

DIRECTIONS:
Place the shredded imitation crab into a glass or porcelain bowl. Plastic or metal are not
recommended. Stir olive oil into the crabmeat until well coated, then stir in the cilantro,
onion, tomato and serrano peppers. Squeeze the lime juice over everything, and mix well.
Season with plenty of salt and pepper. Refrigerate for about 1 hour before serving.

SALSA
----------
INGREDIENTS:
2 (14.5 ounce) cans stewed tomatoes
1/2 onion, finely diced
1 teaspoon minced garlic
1/2 lime, juiced 9
1 teaspoon salt
1/4 cup canned sliced green chiles, or to taste
3 tablespoons chopped fresh cilantro

DIRECTIONS:
Place the tomatoes, onion, garlic, lime juice, salt, green chiles, and cilantro in a
blender or food processor. Blend on low to desired consistency.


Hummus
----------

2 cloves garlic—roughly chopped
¼ cup lemon juice
¼ cup water
14 oz (400g) canned chickpeas (garbanzo beans)—rinsed and drained
½ cup tahini
1 teaspoon sea salt


PLACE all ingredients in a food processor or blender and process until smooth, scraping the sides occasionally.
Variations: If you like a spicier hummus, add a small red chili (chopped) or a pinch of cayenne pepper, or try a little cumin for a more exotic variation.
