My Stuffed Peppers are a hit with DH:
Ingredients: 1lb Lean Ground Meat (beef, turkey, chicken...whatever you prefer) 2 cloves of garlic minced 1 onion chopped 1 large zucchini chopped 4 large green peppers (make sure they are flat on the bottom!) 1 can of diced tomatoes 1 cup of uncooked quinoa (or rice if you prefer) Parmesan cheese ketchup Worchestchire sauce Frank's Red Hot a little garlic powder a little cumin any spices you like really
Preheat oven to 375 degrees
1. Bring a large pot to a boil (large enough to fit full green peppers) 2. Cut tops of peppers off and clean the insides out - add them to the boiling water - boil for 4-5 minutes then set aside in a baking dish wish a small amount of water in the bottom 3.Cook quinoa or rice according to instructions - place in a large mixing bowl 3. Sautee onions, garlic and zucchini in a medium sized pan until soft. 4. Add the ground meat to pan and cook until browned. 5. Add the veggie/meat mixture to bowl with quinoa/rice and mix together 6. Add diced tomatoes, parmesan cheese, ketchup, worchestchire sauce, hot sauce, spices, etc. to your taste. I have no measurements because I just add and taste along the way. I like to experiment each time I cook these. Mix everything all together. 7. Fill the peppers with the mixture and top with parmesan cheese 8. Cook peppers for about 30 minutes or until parm cheese on the top starts to brown and crust up a bit (the best part is the cheesy top!!!)
Enjoy!!!!!
