Pretzel-crusted chicken cutlets
So DH and I are on southbeach diet (phase 2)...basically no white carbs.
We wanted breaded chicken cutlets so I took a bag of sneider's pumpernickel onion pretzels, threw them in the cuisinart and ground them into "breadcrumbs", mixed in some reduced fat parmesan cheese & basil and breaded the chicken with this. OMG, mmmmmmmmmm, DELISH
DH says he likes it better than regular breadcrumbs!!!!

We got a similiar recipe from Rachael Ray's cookbook. We grind up pretzels and add everything that you would have on an everything bagel--sesame seeds, poppy seeds, onion, garlic, salt.
It's awesome, and my DH also likes the pretzel coating better than breadcrumbs. It browns up nicer too.

Did you bake or fry these?
Would it work if I quickly fried them to brown and then put them in over to bake the rest of the time like I do with my regular chicken cutlets?

It's not really a recipe.
I just threw some pumpernickel onion pretzels in the cuisinart and ground them into "bread crumbs" mixed that with some low-fat parmesan cheese and made chicken cutlets like I normally would. dip in egg, dip in breadcrumbs, and fry or bake=YUM
I recently made meatloaf and made the breadcrumbs out of honey wheat pretzels!!
tomorrow night i'm making cutlets again but this time i'm using honey mustard & onion pretzels!

just want to say that i made this last night and it was very yummy! we baked it in the oven instead of frying them bc we are "trying" to be a bit healthier... it was very good. a nice change. i think fried would definitely be even yummier though!
