Pumpkin Muffins
Does anyone have a recipe? I know I made them last year but I cant find a recipe.

I made these last year and they were YUMMY!
I put on the cream cheese frosting
PUMPKIN MUFFINS
3 1/3 c. flour 2 tsp. baking soda 3 c. sugar 1 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1/4 tsp. ground ginger
Mix dry ingredients and add:
1 c. oil 4 eggs 2/3 c. water 2 c. pumpkin
Preheat oven to 350F degrees.
Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess.
Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean.
CREAM CHEESE FROSTING
1/2 c. butter 1 small package cream cheese 1 tsp. vanilla 1 lb. confectioners sugar
Combine butter, cream cheese, and vanilla. Beat until smooth.
Gradually add the sugar, while beating well.
If mixture is too thick to spread, thin to a spreadable consistency by adding a small amount of milk.
or
CREAMY ORANGE ICING
2 tbsp. orange juice 1/4 c. granulated sugar 2 1/3 c. sifted confectioners sugar 1 egg 1/2 c. shortening 1 tbsp. grated orange rind
Mix confectioners sugar and egg thoroughly. Bring orange juice and granulated sugar to boil; boil 1 minute. Add to sugar and egg mixture; blend well. Add shortening and orange rind. Beat until creamy.

I have a pumpkin bread recipe but you can use it as muffins too.
Pumpkin Cranberry Bread
Ingredients: • 2 1/4 cups all-purpose flour • 1 tablespoon pumpkin pie spice • 2 teaspoons baking powder • 1/2 teaspoon salt • 2 eggs • 2 cups white sugar • 1 (15 ounce) can pumpkin puree • 1/2 cup vegetable oil • 1 cup dried cranberries • 1 cup chopped walnuts
Directions: 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9x5 inch loaf pans (or 4 mini loaf pans).
2. In a mixing bowl, combine flour, pumpkin pie spice, baking powder and salt. 3. Combine eggs, sugar, pumpkin and oil in small mixing bowl, beat until just blended. Stir the wet mixture into the dry with a wooden spoon until batter is just moistened. Fold the cranberries and walnuts into the batter. Spoon the batter into the prepared loaf pans. 4. Bake in preheated oven for 50 to 60 minutes. (If using mini loaf pans, begin checking bread after 25 minutes.)
