but you need to make the conrmeal dough, fill it with cooked chicharron and queso blanco or mozzarella.

the fly them up on a cast iron skillet with some oil.

Re: PUPUSA...

I tried making them. It turned out good but a little thicker. It has been a while since I made them.

Buy the cornmeal, Brand name is Maseca (green, white, and yellow bag) and follow the directions on the bag. If you have a tortilla press, use it. I have a tortilla press and it is so much easier this way. Otherwise, you have to roll the masa into a 2 inch ball and flattened out with your hands (it has to be very thin). To make one, I usually press 2 tortillas. On one of the tortillas, YOu would spread refried beans, cheese, chicaron or whatever you like and then cover it with the other tortilla. YOu would then seal the two tortillas together. It reminds me of an empanada.

Now, I have made them two ways. I have grilled them on the stove top (add a little butter or oil) and I have actually fried them. I am not from El Salvador so I am not sure which way is the preffered way. All I know is that I love them!

ETA: I agree with the other posters. So much easier to buy them. I haven't had them in years. I just moved to Suffolk. Any suggestions where?

ETA2: The recipe off the internethttp://en.wikibooks.org/wiki/Cookbook:Pupusa

I am not from El Salvador either....but married to one! Chat Icon and they prefer them made on a griddle with a little oil

I will ask my husband for the address of the place that we like to go to.
