Question about the Corn Casserole everyone is raving about...

Thinking of trying this for Thanksgiving. Can this be made ahead of time and re-heated? Or is it better to make it the day of?

You can make it ahead. I have done this.
Just don't put the cheese on top until you are about ready to serve it.
Put the cheese on and pop it in the oven to melt the cheese and reheat it

I make this day of. It tastes ok reheated but best served fresh. And I omit the cheese on top. It just does not need it IMO!

But you can assemble it the day before and not cook it until the day of.
That tastes exactly the same since its not reheated.

I agree! Also I put it in a 9x13 pan like the recipe calls for which made it way too thin. Next time I'll put it in an 8x8 square dish and leave off the cheese.

IMO it cannot be prepped the day before if you use Jiffy mix. The ingredients like baking powder/baking soda will be activated by mixing it with liquids and will lose their potency.
