Quick chicken question..
I know this should be on recipes but I dont really have time for it. Does anyone know of a recipe that I can make tonight with chicken cutlets that is basically fat free? I want to make some for my mom but it has to be either low fat or fat free...also...I prefer something where I cube the chicken..I dont have enough cutlets for them to be that way. TIA!

You can always do a stir fry. Trim off all of the fat from the chicken, then BOIL it, then stir fry it with fresh veggies.
Boiling with eliminate some of the fat.

if you have low fat Italian dressing or balsamic, you can bake it with that and maybe add some cut up potatoes and veggies.

do you have terryaki sauce and breadcrumbs?
cut up the chicken into bite sized pieces - use water to make the bread crumbs "stick". put a little olive oil in the bottom of a baking dish. put the bread crumb covered chicken in the dish, bake on 450 for 15-20 minutes. take the chicken out of the oven, pour in some terryaki sauce, mix it up so all the chicken is covered. cover the dish with foil and bake at 325 for another 15 minutes.

i just put chicken cutlets in a little balsamic vinegarette and threw them on the George Forman grill..came out great! or you could lightly bread them and bake them in the oven
