Quick help!
I'm having a senior luncheon for work tomorrow, and told them I could bring chicken bc we have plenty of pasta,rice,salad etc. However, I have no clue how much to make. Were expecting 50-60 people.
Help!

thats a lot of people! are there diet restrictions like no salt? i would do a mix of baked chicken cutlets (prepared just like fried, but bake instead) and grilled chicken if you have a large grill pan.
or can do do chicken baked with evoo, s/p & lemon juice baked bbq chicken

A real easy one is getting chicken tenderloins and marinating it in lemon juice, and black pepper and making lemon-peppered chicken. you can grill or bake it. and probably bake since you will have to make so much.
if you don't like the lemon-pepper idea, you can do regular breadcrumb chicken cutlets, lemon-parm crusted cutlets, or get fancy and make something like chicken marsala.
another option is plain grilled/baked chicken and then making a large topping to throw over it all, i prefer a tomato-olive (relish, salsa, topping, whatever you want to call it) with fresh basil and some red wine vinegar.

thought of something else. if its lunch like food, you can get rotisserie chickens already cooked and make chicken salad out of it.
