Rachael Rays 30 minute Shepherd's Pie
This is really good
2pounds potatoes, peeled & cubed salt & pepper 1 Tbls extra virgin olive oil 1 & 3/4 pounds ground beef or ground lamb 1 carrot, peeled & chopped 1 onion, chopped 2 tbls butter 2 tbls flour 1 cup beef stock or broth 2 tsp worcestershire sauce 1/2 cup frozen peas 2 tbls sour cream or cream cheese 1 large egg yolk 1/2 cup cream (or vegetable or chicken broth) 1 tsp sweep paprika 2 tbls chopped fresh parsley.
In a large pot, boil potatoes in salted water until tender, about 12 minutes.
While potatoes boil, heat a large skillet over medium-high heat. Add oil to the hot pan, then beef. Season with salt & pepper. Brown and crumble meat 3 or 4 minutes. Add carrot and onion/cook 5 minutes, stirring frequently. In a second small skillet over medium heat, cook butter and flour together,2 minutes. Whisk in broth and worstershire. COok to thicken gravey 1 minute. Add gravy to meat mixture. Stir in peas.
Drain potatoes and pour them into a bowl. Combine sour cream, egg yolk, and cream. Pour the cream mixture into potatoes and mash with a masher until potatoes are almost smooth.
Preheat broiler to high. Fill a small rectangular casserole with meat and vegetable mixture. Spoon potatoes evenly over meat. Top potateos with paprika and broil 6-8 inches from the heat until evenly browned, about 2-3 minutes. Sprinkle with some chopped parsley and serve.
(i recommend boiling the carrots for a few minutes first because mine were a little hard even though i chopped them small..and i used beef broth instead of the cream for the potatoes and it was delicious)
