Rainbow cookie receipe needed
Please help out a girl... I need a good receipe for Rainbow cookies.. These are my favorite and I am dying to make them!!!

do you mean the ones with m & ms? i would just make the nestle tollhouse recipe and use m & ms instead of chocolate chips....

I think I got this recipe from someone on here.
You’ll need 3 pans the same size – 10 ¾” long x 7” wide x 1 ½” deep. Non stick pans work best or you can line w/wax paper.
4 eggs 1 tsp almond extract 1 cup flour 1 cup melted butter 1 cup sugar food color
For Topping
6 oz chocolate chips 1 tbsp oil
Filling
Jam – strawberry or raspberry. Beat eggs until fluffy. Add sugar, then flour, melt butter and extract. Mix well. Divide into 3 bowls. Add green food color to one, red to another and leave the third plain. Turn into pans and bake at 350 for 10 minutes or until light brown. Let cool. Put first layer on wax paper and spread with jam, then put plain layer on top of that and spread with jam. Lastly put red layer on. (I like to trim edges at this point so it’s all even.)
Melt chocolate chips and oil. Spread chocolate on top of cake and refrigerate or freeze until chocolate is hard. Flip and spread chocolate on other side and refrigerate/freeze. When both sides are hard, cut into small pieces. (Hint: Cut width-wise strips and then turn strip onto its side to cut into smaller pieces, this way your’re cutting throught he cookie more than the chocolate – the chocolate has a tendency to crack)

I would also suggest apricot to spread between the layers. I prefer that one.

From someone who doesn't really like rainbow cookies - Ang's with the apricot spread are the only ones I've enjoyed

here is a good one with almond paste in it. i got it from newsday a few months ago:
4 eggs separated 8 ounces almond paste 1 cup butter softened 2 cups flour green and red food colouring 1/4 apricot jam 1/4 raspberry jam 6 ounces chocolate morsels
preheat oven to 325
beat egg whites to soft peaks, set aside
in large bowl of electric mixer cream together almond paste, butter, sugar and egg yolks. beat well. add flour.
using rubber spatula, mix in egg whites. fold them, careful not to totally mix them in, but they will not be as soft peak like.
divide mix in three equal parts in 3 separate bowls. to one bowl add a few drops of green food colouring; to the second bowl add a few drops of red food colouring. leave the last bowl as is.
cover the bottoms of three 9x12 cookie sheets with wax paper, ends overhanging. spread one of the mixtures in each of the pans. (i found the mix is a little thick to spread, so have patience)
bake the layers for 5-8 minutes. depending on your oven, mine took 5 mins. the wax paper will smoke, keep some windows open. parchment cooking paper would probably work better if you can get your hands on some.
heat the raspberry and apricot jams (separately). on top of the white layer spread the apricot jam, on top of the green layer spread the raspberry jam.
carefully flip the white layer onto the red. remove the wax paper from the white layer. then flip the green layer on top of the other two layers. leave the last sheet of waxed paper on top. cover with aluminium foil.
weight with heavy items to flatten layers. refrigerate overnite.
peel off foil and wax paper and allow to sit for 15 minutes. heat chocolate morsels until melted and spread on top. let sit for another 15 minutes (i usually put it in the fridge). cut away edges to even out layers. cut into rectangles. makes 3 dozen cookies.
