Rainbow Cookies - almond paste or extract?
I know the bakeries use almond paste but do they taste just as good with the extract?
Where can I buy almond paste...do they have it in a regular super market? Do I have to grate it to bake with it?

I have a huge amount of Almond Paste. DH bought a big can at Restaurant Depot I am looking for recipes. Good idea I will have to make these. They are one of my favorite cookies
