What's your fav way to prepare Tilapia?

This is my family's favorite. I met butter in a sauce n with garlic and paprika. Brush it on a baking dish, place fish, brig remaining butter on top and bake. Super easy and delicious!

Reccommend a Tilaipa Recipe
I sprinkle some old bay on the fish, then add lemon zest and juice, a little butter and capers and bake. DS doesn't like "olives" so I put his in a small dish without them. Maybe a sprinking of paprika for color.
I also just got trader joe's roasted red pepper and artichoke tapenade that I think I'm going to make with white fish next week. (not for DS)

Tilapia and mashed yams with pancetta sage breadcrumbs
2 oz thinly sliced pancetta chopped 1 cup fresh breadcrumbs (from french or sourdough bread with crust, ground in processor) 1 tablespoon plus 1 1/2 teasp chopped fresh sage 3 tablespoons butter, divided 4 5 to 6 oz tilapia filets or 8 2-3 oz fillets
Preparation: Saute panchetta in large nonstick skillet over medium heat until crisp. Transfer to small bowl. Add breadcrumbs to 1 tbsp chopped sage to drippings in skillet; stir over medium high heat until breadcrumbs are almost crisp, 5 minutes. Transfer to bowl with pancetta. Cool. (Reserve skillet)
Place yams on plate and microwave until soft. Remove skin. Add remaining 1 1/2 sage and 1 tbsp butter to yams. Mash until smooth. Season to taste with salt and pepper.
Sprinkle fish with salt and ground black pepper. Melt remaining 2 tbsp butter in same nonstick skillet over medium high heat. Add fish and cook until golden brown about 3-4 min per side. If necessary rehead yams in microwave.
Divide mashed yams among 4 plates. Top each serving with 1 fish fillet sprinkle generouslu with pancetta sage breadcrumbs and serve.

Ok, made this tonight. I used flounder though. It was really good. I used about 1/2 the jar for 3 pieces (filled 8x8 pan). Baked and served. The tapenade is strong, you couldn't taste the fish. I will be making this again, maybe with a thicker white fish.

Coat with Emeril's essence (basically a cajan spice mix, you can get the recipe on foodnetwork.com) and sauté in oil and butter.
