Recipe for a yummy minted double-pea soup - on core and 4pts on flex
I made a yummy split pea soup recipe and I thought I would share. It's on core and it's 4 pts on flex. It's super easy, fresh and healthy tasting!
Just an fyi - it may taste better if you make it with chicken broth instead of water (or maybe even half water and half chicken broth) but then I don't know what value it would be on flex but it would still be core.
4 cups water 1 cup split peas (picked over, rinsed and drained) 1 onion, chopped 1 carrot chopped 2 garlic cloves (I used a whole head of garlic because I love it) 1 tsp salt 1/4 tsp freshly ground pepper 1/4 lb ham steak, trimmed of all visible fat and diced 1 cup frozen baby peas 1/4 cup chopped fresh mint
1. Combine water, split peas, onion, carrot, garlic, salt and pepper in Dutch oven (I don't have one just used a regular pot ); bring to boil. Reduce heat and simmer, covered stirring occasionally until the split peas are soft. About 45 minutes.
2. Stir in the ham and peas. Simmer, covered, until the peas are tender, about 5 minutes. Remove the dutch oven from the heat and stir in the mint.
Per serving (1 1/4 cups) 238 calories 2 g fat 1 g sat fat 0 g trans fat 13 mg Chol 992 mg Sod 38 g Carb 14 g Fiber 19 g Protein

Why???? Don't you like peas?
It's good I swear!! The ham really kicks it up a notch!! Not as good as the chili but it's good!!!!
