Recipe of the Day/Maybe?
So I don't mind picking up the Recipe of the Day responsibility while Kristen is busy. I have a very large computer database of recipes. I can post a dinner recipe each day during the week and a desert one on the weekends.
Let me know if that's okay?
In the meantime here's one of my favorite easy ones:
Super-Easy Chicken Manicotti
Recipe By : Serving Size : 7 Preparation Time :0:20 Categories : Poultry
1 jar tomato sauce -- (26 to 30 ounces) 3/4 cup water 1 teaspoon garlic salt 1 1/2 pounds chicken tenders 14 manicotti -- uncooked, 8 ozs 2 cups mozzarella cheese -- shredded, 8 oz Chopped fresh basil leaves -- if desired
Heat oven to 350°. Mix pasta sauce and water in medium bowl. Spread about one-third of the pasta sauce mixture in ungreased rectangular baking dish, 13x9x2 inches.
Sprinkle garlic salt on chicken. Insert chicken into uncooked manicotti shells, stuffing from each end of shell to fill if necessary. Place shells on pasta sauce in baking dish. Pour remaining pasta sauce evenly over shells, covering completely.
Cover with aluminum foil and bake about 1 hour or until shells are tender. Sprinkle with cheese. Bake uncovered about 5 minutes or until cheese is melted. Sprinkle with basil.

I'll even throw in an extra one for the first day, it's a great side dish (not to have with the pasta though):
Homemade Rice and Roni From Paula Deen Servings: 2 Preparation Time: 15 minutes Start to finish: 35 minutes
Categories: Side Dishes
Source: Food Network
1/2 tablespoon oil 1/4 pound pasta, vermicelli or spaghetti 1/2 cup long grain rice 1/2 small onion, chopped 1/2 tablespoon chopped fresh parsley leaves, or 1 teaspoon dried parsley 1 cup chicken or beef broth
1. Begin by placing the oil in a pot and breaking the dried noodles into 1/2 to 1-inch pieces.
2. Turn on the heat and stir the noodles in the oil until they begin to brown slightly.
3. Add the rice, onion, parsley, and broth. Stir mixture, cover tightly, and cook as you would regular rice, approximately 20 minutes.
4. Fluff rice with a fork and serve.

Never would have thought about putting chicken in Manicotti. I have to try this - sounds so yummy!
