Recipe Rave- Chicken Tortilla Soup

Made this tonight from my Better Homes and Gardens Cookbook. So easy and fast:

Chicken Tortilla Soup

1 lb chicken cubed
1 Bell Pepper chopped
1 Med. Onion chopped
32 oz chicken broth
1 can diced tomatoes
2 tsp chili powder
1/2 tsp cumin
1c frozen corn kernels
Pepper


Combine pepper, onion, broth, tomatoes, chili powder, cumin and pepper (to taste) in a dutch oven. Bring to boil. Add chicken (raw) and bring to boil. Cover and simmer 10 minutes. Add corn. Bring back to boil. Cover and simmer 10 minutes.

Serve with pepper jack cheese, tostitos, add slices of avocado to top.
