Chicken and Broccoli Bake
1 package of frozen broccolli florets 1 package of thin chicken cutlets cup of cheddar cheese 1 can of cream of broccoli soup
Spices: Garlic Powder Onion Powder Black Pepper
Preheat oven to 375 deg. Get a pyrex dish then place all the broccoli in dish, place chicken on top of the broccoli, sprinkle spices (according to your taste), spread cream of broccoli over chicken. Cover and bake for 30 mins for 35 min or until chicken is cooked. Once its cooked, sprinkle cheddar cheese on top cover and bake again for 5 more mins or until cheese is nice and melty.
Its so fast and easy. Enjoy!

Chicken Scampi
·1/2 cup butter ·1/4 cup olive oil ·1 teaspoon dried parsley ·1 teaspoon dried basil ·1/4 teaspoon dried oregano ·3/4 teaspoon salt ·4 cloves garlic, minced ·1 tablespoon lemon juice ·4 boneless chicken breast halves, sliced lengthwise into thirds
In a skillet heat the butter or margarine and oil over medium high until the butter/margarine melts. Add the parsley, basil, oregano, salt and garlic and mix together in the skillet. Stir in lemon juice.
Then add the chicken and saute for about 3 minutes or until white. Lower the heat and cook for about 10 to 15 minutes or until chicken is cooked through and the juices run clear. More butter/margarine can be added if needed.
*Notes: I coat the chicken in seasoned flour first (mix together flour, ½ - 1 tsp oregano, parmesan cheese). To make it even easier, I get all the dry ingredients together in a pinch bowl first – the parsley, basil, oregano, and salt. That way I can just throw it in the pan once the butter’s melted. I like garlic and don’t actually mince the cloves myself so I usually toss in a tbsp of chopped jar garlic. You can also use white wine instead of lemon juice.
