You can make a few things. I've done a turkey chili and make your own tacos using turkey meat.
Turkey Chili -
1 med onion
green pepper
oil
1 jar sauce
1 lb ground turkey
1 or 2 packets chili seasoning (depending how hot you like it)
kidney beans
cut up onion and pepper and brown a little in large pot with some EVOO. Add ground turkey and cook till brown. Add sauce, beans and chili powder and mix all together and let sit for 20 mins or so till ready to serve.
For the tacos... just follow the directions on the taco seasoning and then buy any shells (hard or soft) and chop lettuce, cheese, tomatoes, etc.

You can basically use turkey meat for anything where you'd use ground beef..
meatloaf
tacos
stuffed shells
burgers
etc.

I like stuffed peppers BETTER with ground turkey.
Start by making rice. I make plain white rice but I use beef broth to cook it in.
Sautee 1 medium onion and 5 cloves of garlic in a large pan, wok or dutch oven with about a Tbsp of Olive Oil. Once softened and fragrant add 1lb ground turkey. Sautee until turkey is cooked through – turn off heat. Add 1.5 cups of plain tomato puree , 1 cup of frozen peas, 1.5 cups cooked rice, 1 half cup grated Gruyere, 2 Tbsp Worcestershire sauce, 1 Tbsp of Beef Boullion Paste and stir together.
Cut the tops off of several peppers – I use different color bells. Rinse them and stand them in a casserole dish with a little plain tomato sauce on the bottom. Fill each pepper with the meat mixture top each pepper with a little plain tomato sauce and stick in the oven for about 30-40 minutes (I go by smell – if the house smells like cooked peppers you are good to go). About 10 minutes before they are done, pull out the peppers, add a bit more sauce and a palmful of grated gruyere. Cook until cheese is bubbly.

ITA! Evertyhing that calls for ground beef I use ground turkey instead since its healthier

I make a meatlof called turkey and stuffing meatloaf. Do a recipe search on rachel ray's website. It's so good!
