i cut potatoes up into small chunks... put some EVOO, and some montreal steak seasoning all over them- bake them at 425 for about 20 minutes--- i get compliments on them all the time! SOO good!

Re: Recipes for oven fries?

I just made these yesterday for the first time! Chat Icon i did a hybrid of this recipe and one from the Betty Crocker cookbook.

Basically, I took a few potatoes and cut then in half, then into french fry lengths. (scrubbed them first!)

the spices were 1/2 t. garlic powder, paprika, sugar. A dash of salt, pepper and Italian seasoning and some shredded Parmesan.

mixed the spices w/evoo and dipped the potatoes in it. place the skin side down (as much as possible!) on a non stick baking sheet. Bake for 25 to 30 mins at 425. Stick w/fork to test doneness.

When i do them again i'll sprinkle on the spices, you couldn't really taste them but the fries were so yummy.

I usually sprinkle the fries with Morton's Hot Salt.. Good Luck finding it though, I found it once in Stop and Shop and now that I have run out, I haven't seen it anywhere Chat Icon

Re: Recipes for oven fries?

For fries you can cut up potato and dip it in egg white. Spray a crap load of PAM or else they will stick.

I make oven potatoes that everyone loves. I cut up potato-melt butter and toss them in butter and EVOO and do salt and pepper or garlic salt or even a garlic bread sprinkle if I have it. Then bake around 400 for 30 mins or so.

Re: Recipes for oven fries?

The best trick for oven fries is this:

Heat up the pan first - put it in the oven and while it heats up, cut potatoes and mix with EVOO, salt, spices, etc.

Take the pan out and when you pour the potatoes onto it, you will hear a sizzle.

Then put into the oven, this will create a nice crust on the potatoes and the inside will be soft.

I always get compliments - I do this with sweet potatoes too, and any style cut of potato - wedges, fries, sliced, etc.
