I would do sushi bowls. Make sushi rice, toss the shrimp with mayo and sriracha, and top with avocado, cucumber, mango or whatever you like. Serve with soy sauce for dipping. You can press layers into a round pyrex to make it look fancy or just do it in a bowl.
Maybe serve in a dinner salad like a cobb or caesar salad.

Those sushi bowls sound soooo good. I also saw a recipe for sushi stackers that looked pretty easy with the rice from trader joes too. Let me find it
ETA- here it is- it was skinny taste, but I saw a video of how to make it on a fb page i follow.

That's very similar to the recipe I first used but it was with sushi rice. The rice came in a big container so I had to keep making them or something similar until I used it up lol.

We toss cooked shrimp into the Trader Joe’s frozen seafood paella to bulk it up. It’s literally a 5 min meal! So easy.

So versatile.
I do pasta in either garlic and oil or a marinara sauce and add the shrimp.
Topped with tomato sauce, oregano, feta cheese and popped under the broiler.
I also add them to salads and to stir frys.
