Paradisus Playa Conchal in Costa Rica
Riu Palace in Cabo (although I'm not sure Cabo is the place to be right now. The Riu chain has other locations though.)
I second Riu Palace in Cabo San Lucas, Mexico... We stayed there for our HM and it was SUPER FABULOUS!!!!

Sandals in St. Lucia! The Grand St. Lucian was the best one,...there are 3 in St. Lucia.
