Recpie with chicken
So bored with chicken lately - tried the chicken madiera and loved it, but need something else - need suggestions!!

i often buy rice a roni and use their skillet recipes on the box
i have a few recipes i can give u when i put the baby down!

In a baking dish put: frozen spinach on the bottom---a nice size layer fresh or frozen chikcen on top of the spinach then a can/jar of brown chicken gravy (you can use fat free if you prefer) you can stop there and place in oven at 375 covered with tinfoil till chicken is cooked through and then uncover and continue cooking for 10 -15 minutes If you like you can add cheese---american, swiss whatever you prefer on top for the last 10 to 15 minutes My husband loves it and it is so simple

Also a good spin on regular breaded chicken instead of using an egg wash you can use creamy italian or ranch salad dressing and italian seasoning bread crumbs and just bake as usual

chicken and asparagus or broccoli in a garlic and oil over pasta----to cut down on the amount of oil---I cook the chicken and veggies in chicken stock and only add the oil at the end when the pasta is added to the pan for the last 5 minutes of cooking

we eat chicken every night in my house, or at least it feels like it.
I make it in all sorts of ways, all of them easy weeknight dinners
Cut Up Chicken: 1. chicken, onions & peppers w/ store bought fajita seasoning on whole wheat wraps. Goya rice mix on the side.
1. chicken, marinate in teriyake, sautee with vegetables (broccoli, sugar snap peas, onions, peppers, stringbeans, anything you like) over brown rice.
Chicken Parts: 1. put chicken parts seasoned with Adobo & Sazon in a sautee pan with cubed potatoes and vegetables (broccoli, carrots), a little water in the bottom of the pan and simmer on low for 1 hour. 2. Shake & Bake 3. Marinate in Olive Oil, Lemon & Garlic. Bake.
Stuffed chicken breast: take a breast and cut a slit or pocket into the thickest part Season breast with salt & pepper Once stuffed, spray with Pam and sprinkle with bread crumbs or top with shredded cheese 1. Spinach, Mushroom, Shallots, fat free mozzarella 2. Mushroom, spanish onion, fat free cheddar cheese 3. Asparagus, spanish onion, garlic, pignoli nuts, top with mozzarella before serving 4. broccoli, fat free cheddar cheese 5. ham and swiss 6. spinach, bacon & swiss
Marinades: 1. wisk together: 1 clove garlic, Dijon Mustard and Balsamic Vinegar, stream in olive oil. Grill breasts. Make mushrooms with remaining marinade. 2. Sesame Oil, 1 clove garlic, Adobo 3. Olive Oil, Rosemary, 1 clove of garlic 4. BBQ Sauce & diced onion 5. Sesame Oil, Ginger, soy sauce, brown sugar

here are mine....
Chicken Caccitore 1 Tsp olive oil 1 Lb chicken cutlets 1 Large green pepper (I alos threw in red pepper and onions) 15 oz marinara sauce 1/2 cup water 2 cups cooked white rice
Heat oil on med-hi. Add Chicken and veggies. Stir frequently for 5 minutes or until chicken is lightly browned.
Add sauce & water. Bring to a boil and reduce to low. Cover and cook for 5 minutes.
******************************************* Salsa Chicken 1 lb chicken cutlets cut up into chunks 1 Tbsp oil 1 tsp garlic 2 cups rice (Minnute rice, uncooked) 16 oz jar salsa 1 1/4 cup water 1 chicken bouillon
Brown chicken and garlic in oil.
Add rice ,salsa, water, and bouillon and bring to a boil.
Cover and reduce heat to low. Cook for 10-12 minutes, stir occassionally.
********************************************* Chicken MArsala (you can also follow the recipe if it's on the bottle of marsala wine) 1/4 cup flour 1/2 tsp garlic salt 1/4 tsp black pepper 1/2 tsp oregano 4 chicken breasts 1 Tsp olive oil 1 Tbsp butter 1 cup mushrooms 1/2 cup marsala wine (I usually use more...we like it saucy--about 1/2 bottle each time I make it).
In a bowl, mix flour, garlic salt, pepper, oregano. Coat chicken.
Fry chicken in oil and butter in a skillet. Turn chicken over and add mushrooms. Cook about 2 minutes, stir mushrooms.
Pour marsala wine over chicken. Cover, reduce to low and simmer 10 minutes.
Serve with pasta or white rice.

This Greek-inspired dish is brimming with lots of spinach, onion and feta. Pair it up with steamed rice for a complete meal. Or try it over a bed of mixed greens.
Ingredients 1 Tbsp olive oil, divided 1 small onion(s), chopped 10 oz spinach, fresh 1 tsp lemon zest 1/4 cup feta cheese, crumbled 1 tsp table salt, divided 1/2 tsp black pepper, divided 1 pound Tyson Boneless, Skinless Chicken Breast(s), four 4 oz cutlets
Instructions * In a large nonstick skillet heat 1 teaspoon oil; sauté onion until golden, 5 minutes.
* Wilt spinach (steam spinach or heat damp spinach over medium heat in nonstick pan); stir in zest, feta, 1/2 teaspoon salt and 1/4 teaspoon pepper. Set aside.
* Divide spinach mixture between cutlets. Roll up and secure with toothpicks. Sprinkle with remaining salt and pepper.
* In same skillet, heat remaining oil over medium-high heat. Cook chicken, turning occasionally, until golden brown and cooked through, about 10 minutes. Remove toothpicks.
