red soup?

when you are making a "beef" based soup - or what my mother calls red soup - do you need a beef bone like you would with a chicken soup for flavor? or can you just put in the meat?

if you have meat for the soup - do you brown it first? or throw it in raw?

i woudl ask my mom- but she is on vacation- HELP!
