I've used the boxed duncan hines red velvet cake and a tub of temptee cream cheese for my cake pops.

Bake a box of Duncan Hines Red Velvet according to directions on box....or you can make it from scratch if you're so inclined
Allow cake to cool completely & crumble it into a mixing bowl.
With your hands, mix the crumbled cake with 3/4 can of cream cheese frosting (I use Duncan Hines)
Refrigerate the mixture for a bit & then roll it into balls. (Makes rolling easier if it's chilled).
I usually freeze the balls overnight before dipping them in chocolate. I use white and dark chocolate candy melts to dip them and then drizzle the balls with the opposite chocolate for a more decorated look.
Simple & delicious! They taste better cold IMO so I keep them refrigerated. HTH.
