Red Velvet Cake virgin here..it's in the oven..but..
I had to see what the big fuss is about.
It's in the oven, but I tasted the batter and it didn't seem so amazing.
We shall see...will I fall in love with it?
Is it ok if I don't do cream cheese frosting? Cream cheese frosting just scares me....so I am using vanilla. Is that okay?

I don't see what all the fuss about red velvet is either. I think its just ok.
All of my friends bragged about having red velvet wedding cakes and they just didn't do it for me!

I like better from a bakery then when i make it at home. The cream cheese frosting is what makes the cake so much better.

They can be dry - it needs the extra buttery cream cheese frosting to balance it out IMO.
The batter gets everywhere when I make it and it truly does look like an autopsy.

I honestly didn't like it until I had a cupcake from Sprinkles that was Red Velvet!
I was always WAY scared of cream cheese frosting... it never sounded appealing AT ALL! But honestly, it's really good! It's not "tangy" at all if that's what you are imagining. It's creamy and sweet like a regular buttercream!

It's just OK, very trendy right now. Altough Cheesecake Factory has a RV Cheesecake that I like better than regular red velvet cake.

I think how it is made is very important. I've had really good and I've had really bad. It isn't red velvet without the cream cheese frosting though.
ETA That's like having a Boston Creme donut without the filling.

Love red velvet cake, had it for my wedding with vanilla frosting and it was amazing. I actually just got a box to make cupcakes this weekend, going to use whip cream for the frosting with blue sprinkles... a little red, white and blue action.... thought I would get festive for Mem Day
