Rice and Beans anyone?

Does anyone have a recipe for authentic Puerto Rican rice and beans?

Thanks!!!

When I've had it before it has been w/ red beans and yellow-ish rice with some kind of meat in it... Thanks!!!

I don't really make it with meat, other than the ham to make the sofrito and
I do everything by "eye", but if you have any questions you can FM me:

1 can tomato sauce
1/2 green pepper chopped
1/2 large onion chopped
2-3 cloves of garlic chopped
2-3 tbs. olive oil
small piece of cooking ham - cut up (about the size of a audio tape)
1 15 oz. can of beans (gandules, pink beans - whichever you want)
2 cups white rice (I use med. grain Goya white rice)
Salt and pepper to taste

Saute onions, peppers, garlic, ham and olive oil (this is called sofrito) in a wok like pan on Med heat. Make sure not to burn the garlic. Do this for around 5 minutes. Toss in the can of tomato sauce and your choice of beans. Add salt & pepper. I usually taste at this point. It can be a little salty, but that's ok, you will be throwing in rice and water and that will dilute it.

Put your two cups of rice in a bowl and fill with water until about 1/2 inch over the rice. Throw entire bowl (rice and water) into pan. Bring stove top up to high until all of the liquid has dried up. Mix once or twice. Then as soon as the liquid has dried up, turn heat to low immediately, cover and leave for around 20 minutes until rice is cooked.
Don't mix until rice is thoroughly cooked at this point or it will get mushy.

I made this today following this recipe and the one on the back of the Goya pigeon peas and it came out yummy!!!!!! ( and it was EASY)
